Lavender Muscovy Ducks

Perennial favourite of chefs.  The Muscovy Duck is the only duck that is not derived from Mallard stock.  It is a perching duck, taking over the chicken roosts at will.  The meat is lean with a tenderness that is compared to veal.  The lavender variety is much heavier than most other domestic ducks which makes them ideal for festivities.
